Arugula, cauliflower, kale, broccoli, turnip greens, turnips, cabbage, Brussels sprouts … They contain powerful antioxidants such as sulforaphane that increase tumors, ”he explains, telling us that in order to absorb sulforaphane – which is found inactive in vegetables with the molecular form of glucoraphanin – it must be ground. “When we crush the broccoli, the myrosinase enzyme is activated and our body has the ability to better absorb this antioxidant. You can also add mustard seeds to broccoli, since mustard is very rich in myrosinase,” he tells us, and he recommends having a weekly menu where the cruciferous passes twice a week to take advantage of all its properties.
