To my family and to all the people who have stayed close to me, people who have been in my life all the time, who don’t know how to fail. It is invested in the Clandestine Kitchen. I have two things in mind: traveling all over Ecuador, getting into a truck and focusing on tasting people’s food and mixing it with my flavors, making new things; and the second is to grow with a local in Quito.

What is your gastronomic specialty?

My thing is the Gourmet Laboratory, that is, putting food together from all sides. It is more than food, it is to provide an experience based on knowing the person, getting to know him, knowing what he likes and dislikes, and basically creating a dish that comes their own .

It’s my lifelong dream, but it was very difficult to get where I am. It took me ten years to join an airline since I got involved in aviation. When I started flying, the first thing that came to mind when I got to a destination was to try food … So the fusion of aviation and gastronomy is brutal.
